This is a modified version of a recipe for Macro Muffins that I tried for my breakfast meal prep from ketoconnect.
Their original version was sweet and called for using a flavored protein powder. I figured I could make it savory by using plain unflavored protein powder with some some spices, and turn it into a breakfast experience by adding bacon, cheese, and green onions.

Keto Bacon Cheddar Protein Muffins
Servings 6 (2 per serving)

Ingredients
- 8 whole Eggs
- 8 oz Cream Cheese room temperature
- 4 tbsp Butter room temperature
- 2 scoops Unflavored Protein Powder ~58 grams
- 3/4 cup Crumbled Bacon ~3 oz if using fresh cooked
- 4 oz Extra Sharp Cheddar Cheese Crumbled or shredded
- 1/4 cup Green Onions chopped
- 1/2 tsp Pink Salt
- 1/4 tsp Onion powder
- 1/4 tsp Garlic Powder
Instructions
- Preheat oven to 350 degrees and spray a 12-cup muffin pan with coconut oil spray
- Add butter and cream cheese to a medium bowl and mix with a hand mixer until combined
- Add eggs, protein powder, salt, garlic powder, and onion powder. Mix with hand mixer until smooth
- Portion batter into muffin pan and then add a little less than 1 tablespoon each of the cheese and bacon, and about a teaspoon of green onion to each cup
- Bake for 20 – 25 minutes until set and slightly brown on top. Be careful not to over-brown as the muffins could get too dry
- Allow to cool completely before removing from pan and storing or eating
