Keto Chicken Bacon and Broccoli Bake

Ingredients
- 1 1/2 lbs Chicken Breast boneless, skinless
- 1/2 cup Heavy Cream
- 4 cups Broccoli
- 1/4 cup Yellow Onion diced
- 1 tsp Minced Garlic
- 1/4 cup Crumbled Bacon
- 2 oz Cream Cheese
- 1/4 cup Grated Parmesan Cheese
- 2 tbsp Avocado Oil
- 1/2 tsp Pink Salt

- Oven-Safe Sauté Pan Optionally you can transfer the mixture to a baking dish for the final step
Instructions
- Heat oven to 400 degrees.
- Cut Chicken into bite-sized (about 1 inch) pieces. Sprinkle with salt and pepper.
- In large oven safe sauté pan, Brown the chicken over medium-high heat in the oil (in batches if necessary). Remove from pan and set aside, leaving the pan drippings and any leftover oil.
- Add onion to the pan, and cook for 1-2 minutes until softened.
- Add the bacon and garlic and cook for one more minute.
- Add broccoli and toss with the onion, garlic, and bacon. Cook for 2-3 minutes (longer depending on how well done you prefer your broccoli).
- Add the heavy cream and cream cheese, then stir until the cream cheese is melted.
- Add the chicken back to the pan and mix well – if the sauce is too thick, add some water to thin it out.
- Top the mixture with the parmesan cheese. Place in the oven and bake for 10-15 minutes, until brown and bubbly on top. Serve immediately or portion for meal prep.
