A Keto-Friendly Asian Classic in Minutes
This easy 1-pan keto fried cauliflower rice with Chicken recipe is perfect for a quick weeknight meal. You can make it even more quickly if you use pre-cooked chicken and frozen Cauliflower rice.
Before Keto, fried rice was a favorite of mine – I got it with every meal, from Beef with Broccoli, to Sesame Chicken (coming soon!).
It turns out that you can easily replicate a delicious keto-friendly fried rice using cauliflower. You can use this recipe as a base for all kinds of dishes – just add your favorite ingredients to mix it up.
Cauliflower – A Quick and Easy Substitute for Rice
Cauliflower rice is an easy and versatile staple in keto cooking. Its neutral flavor and texture makes it perfect for side dishes. You can make rice, mashed potatoes, or even polenta. You can get it whole and do all the prep work yourself, or you can get in all types of pre-prepped forms.
I usually go for either fresh or frozen riced cauliflower as my starting point. You can make almost any side dish from that, but if you’re doing something that requires larger pieces, you’ll want to start with a whole fresh head.
In this recipe I used Green Giant Riced Cauliflower Medley. It has a few extra vegetables in it to give the blend an authentic fried rice feel. The vegetables are in such small amounts that they have a negligible amount of carbsOther .
Other Ways to Make Keto Fried Cauliflower Rice
This recipe can be made in dozens of different ways. You can switch out or add your favorite vegetables, proteins, or sauces of my favorite take-out versions has a combination – pork, chicken, and beef. Try this recipe with a little Sesame or low carb peanut sauce for a different profile altogether.
Keto Fried Cauliflower Rice with Chicken
Ingredients
- 1 package Green Giant Riced Cauliflower Medley or 400 gr of chopped cauliflower
- 3 stalks Green Onion
- 1 tsp Pink Salt
- 2 tbsp Ghee
- 1.5 pound Boneless Skinless Chicken Thighs or use pre-cooked chicken
- 1-2 tbsp Liquid Aminos or Soy Sauce
- 1 tbsp Minced Garlic
- 1 tbsp Chili Garlic Sauce
Instructions
- Cut chicken into bite-sized pieces and sprinkle with salt. Heat oil in a large pan or wok to medium-high heat, and brown the chicken (if using raw).
- Remove chicken from pan and set aside. Add minced garlic to pan with remaining oil, and cook for 1 minute, being careful not to let the garlic burn.
- Add cauliflower and sauté for 2-3 minutes until hot, then add pink salt, green onion, and chicken.
- Cook for 2-3 minutes, then add liquid aminos and green onions. stir to combine and allow to heat through.
- Serve immediately, topping with 1 teaspoon of chili garlic sauce and green onions for garnish.
