Keto Taco Salad

This quick keto taco salad recipe is easy to make as a quick weeknight dinner, or is ideal for meal prep. I made my own taco seasoning for this, but you can also use any prepackaged keto-friendly version you prefer

Taco Seasoning~

Instructions

  • Mix all the taco seasoning ingredients in a small bowl and set aside
  • Brown ground beef coconut oil in a large skillet on medium-high heat, and drain if preferred. Add the taco seasoning and mix well
  • Add ~1 cup of water (enough to cover the beef) to the skillet, and simmer for 10 minutes, or until sauce is reduced and thickened
  • While beef is simmering, portion ~1 1/2 cups of lettuce into bowls and set aside
  • Once the sauce has reduced, taste and adjust seasoning if neccessary
  • Portion the beef on top of the lettuce and top with each bowl with 1 oz of cheese, ~2 tbsp each of sour cream and salsa, and other toppings of your choice. If meal prepping, portion and pack the salad components separately
