Part 1: The Chicken

  • Add the avocado oil to a large heavy pan and heat on medium heat.
  • While the oil is heating , cut the chicken breast into bite-sized pieces and set aside.
  • In a a zip top bag or large bowl, mix together the CarbQuick, salt, pepper, garlic powder, onion powder, and paprika.
  • Add the chicken to the dry mixture, and shake or stir until coated evenly.
  • Remove the coated chicken pieces from the mixture and place on a plate os wire rack. Let sit for a few minutes until the oil is heated and ready for frying.
  • Fry the chicken in batches in the hot oil until golden brown. Remove from oil and place on a wire rack or paper towels to drain.

Part 2: The Gravy

  • When all the chicken is cooked, strain about 1/4 cup of the frying oil. Discard the rest of the oil, and then add the strained oil back to the pan over medium heat
  • Once the oil is heated, add the minced garlic and about a 1/2 teaspoon of onion powder. Sauté for one minute, and then add about a tablespoon of the seasoned CarbQuick flour. Cook for about 30 seconds until the flour begins to brown
  • Dissolve bullion cube in 1 cup of hot water, add it to the pan and bring to a boil. Lower the heat and reduce by about half.
  • Once the liquid is reduced, slowly add 1/4 to 1/2 tsp of xanthan gum a little bit at a time, whisking constantly until the desired thickness is achieved. After each portion of xanthan gum is added, whisk for at least a minute or two before adding more – Xanthan gum thickens more slowly than traditional thickeners.

Part 3: The Cauliflower Rice

  • In a large pan, sauté the Cauliflower rice in a tablespoon of butter. Add salt, pepper, garlic powder, and onion to taste.
  • Portion the cauliflower rice into bowls, top with the fried chicken gravy. Serve immediately.
