This recipe can also be done in one bowl. The technique for this recipe is simple – combine, scoop, and bake.

Picking The Right Peanut Butter for your Peanut butter Chocolate Chip Cookie

This works with any style of peanut butter. I prefer the crunchy kind that contains only peanuts and salt. That’s all you need for great peanut flavor and nutrition.

I highly recommend Laura Scudder’s Nutty Peanut Butter. The nutty version of this brand has a net carb count as low as 2, and it packs a huge amount of peanut flavor. You can find it in most major chains and on Amazon.

Picking the Right Sweetener for your Peanut Butter Chocolate Chip Cookies

You can also use any sweetener you like. I prefer Allulose, Erythritol, or Monkfruit. If you’re using Erythritol, the liquid stevia will help to offset any cooling sensation.

I also highly recommend that you get the powdered version of your sweetener of choice. Most keto-friendly sweeteners have trouble dissolving completely. This problem can be fixed by using the powered version if it is available, or you can make your own powdered sweetener by pulsing it in a high-powered blender. I use a Ninja blender.

The addition of sugar free chocolate chips (I’m a huge fan of Lily’s) make these a game changer. Lily’s is the best maker of chocolate chips in the keto game. I highly recommend them. They are available in milk chocolate, dark chocolate, and semi-sweet.

  • Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  • Mix the peanut butter, egg, sweetener, chocolate chips, and Stevia drops in a large bowl.
  • Divide dough into 12 equal portions (a cookie scoop will come in handy if you have one), roll into balls, and place on the lined baking sheet.
  • Use a fork to flatten the balls and create a cross-hatch pattern by pressing down in one direction and then the other.
  • Bake for 10-15 minutes, checking around 10 minutes in case they cook quickly. Cookies will be very soft when they first come out of the oven, but they will firm up quickly once they cool down.
  • Let cool for 10-15 minutes before eating or storing.
