  • Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  • Mix the peanut butter, egg, sweetener, chocolate chips, and Stevia drops in a large bowl.
  • Divide dough into 12 equal portions (a cookie scoop will come in handy if you have one), roll into balls, and place on the lined baking sheet.
  • Use a fork to flatten the balls and create a cross-hatch pattern by pressing down in one direction and then the other.
  • Bake for 10-15 minutes, checking around 10 minutes in case they cook quickly. Cookies will be very soft when they first come out of the oven, but they will firm up quickly once they cool down.
  • Let cool for 10-15 minutes before eating or storing.
