Melt ghee in a large sauté pan on medium-high heat
Cut Chicken breast into 1" pieces and add to hot skillet. Allow to sear on one side for 2-3 minutes, then turn each piece and sear the other side.
Once Chicken has seared on both sides, add minced garlic and green onion and sauté for 1 minute until the garlic blooms.
Add the kale and toss until coated in fat, then add the salt, pepper, and onion powder. Cook for 1-2 minutes, or until the kale is cooked to desired tenderness.
