Broccoli Slaw – What the Heck Is It?
This Keto Bacon Cheeseburger recipe uses a couple of my favorite keto ingredients: broccoli slaw and pre-cooked crumbled bacon (you can of course make your own crumbled bacon, but for a quick weeknight meal, the Hormel Real Crumbled Bacon works great). Just add some of your favorite cheese and some ground beef, and you have a quick 4-ingredient meal for a weeknight keto dinner.
Broccoli Slaw is just broccoli that has been cut into matchstick-sized segments and mixed with a little carrot. I use it all the time for meal prep or as a quick dinner side dish. It makes for a great option that holds up well to high heat cooking. Its a lot like a coleslaw, but much heartier.
The recipe is quick, simple, and delicious. It can be whipped up in a few minutes on any day of the week. It’s also great for meal prep. If you’re feeling inspired, dress it up with your favorite burger ingredients. It works well with mushrooms or ketchup mustard and pickles.
Keto Bacon Cheeseburger Broccoli Slaw
Ingredients
- 1 lb 80/20 Ground Beef
- 1/2 tsp Black Pepper
- 1 tsp Pink Salt
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic Powder
- 15 oz Broccoli Slaw
- 6 tbsp Crumbled Bacon about half of a 3 oz package
- 1/4 cup Heavy Cream
- 4 oz Extra Sharp Cheddar Cheese
Instructions
- Combine the black pepper, salt, onion powder, and garlic powder in a small bowl and set aside. Shred the cheddar cheese if not already done.
- Brown ground beef in large pan or wok, and season with half the spice mixture.
- Remove the ground beef from the pan, leaving most of the rendered fat. add the bacon crumbles and brown in the oil until crispy.
- Add the broccoli slaw and toss to coat in the fat, then add the rest of the spices. Cook and stir for 1-2 minutes.
- Add the ground beef back to the pan along with the heavy cream. bring the heavy cream to a boil, then add the shredded cheese.
- Mix everything well and heat until the cheese melts, forming a creamy sauce. Serve immediately, or allow to cool before portioning for meal prep.
