Keto Creamy Jalapeno Beef Casserole

This recipe was inspired by something I came across in Keto Connect’s cookbook. They created a Jalapeno Chicken Popper Casserole, but I wanted to do it with beef in order to keep up with my macros for the keto protocol I’m following and to change the flavor up a bit.

I made this recipe for meal prep, but it also makes a great quick meal.

Ingredients

Instructions

  • Preheat broiler to ~500
  • Combine onion powder, garlic powder, and salt. Mix well and set aside. Seed (if desired) and dice jalapeños and set aside
  • Brown the ground beef over medium-high heat, seasoning with about half of the spice mixture
  • Lower heat and add heavy cream and cream cheese. stir to mix and melt
  • Once the cream cheese is melted and smooth, add the remaining spice mix, 2/3rds of jalapeños, 1/2 of the bacon, and 1/2 of the cheese. Mix well
  • Transfer the mixture to an 8×8 broiler-safe pan and top with remaining cheese, bacon, and jalapeños 
  • Place under broiler for 3-4 minutes until brown and bubbly
  • Allow to cool for 5-10 minutes to serve immediately, or cool a little longer before portioning for meal prep
