Mix all the taco seasoning ingredients in a small bowl and set aside
Brown ground beef coconut oil in a large skillet on medium-high heat, and drain if preferred. Add the taco seasoning and mix well
Add ~1 cup of water (enough to cover the beef) to the skillet, and simmer for 10 minutes, or until sauce is reduced and thickened
While beef is simmering, portion ~1 1/2 cups of lettuce into bowls and set aside
Once the sauce has reduced, taste and adjust seasoning if neccessary
Portion the beef on top of the lettuce and top with each bowl with 1 oz of cheese, ~2 tbsp each of sour cream and salsa, and other toppings of your choice. If meal prepping, portion and pack the salad components separately
